What You Need:
1 large steak, cubed
1 bunch green onions, chopped
1 tsp minced garlic
3 tbsp olive oil
2 tbsp flour
1 tbsp beef soup base
2 sweet potatoes, peeled, cut into chunks
2 carrots, peeled, cut into pieces
1/2 small turnip, peeled, cut into chunks
i celery stalk, chopped
3 large mushrooms, sliced
3 cups water
1 can diced tomatoes
1/4 tsp cumin
1/4 tsp ground coriander seed
2 bay leaves
1/4 cup frozen peas
What You Need To Do:
Brown beef in olive oil in large skillet. Add chopped onion and minced garlic. When meat is browned, add flour and beef base. Stir until meat is coated with flour. Add 2 cups water and stir until a broth forms. Add remaining 1 cup of water. Add chopped tomatoes
Meanwhile, cook potatoes, carrots, and turnip until el dente (still crunchy). Add vegetables to stew pot, except sweet potatoes. Add remaining ingredients. simmer 2 hours or until meat is tender. Spoon stew over top of cooked sweet potatoes.
