Orange-Ginger Chicken






What You Need:

1/2 cup orange juice, preferably freshly squeezed)
1/4 cup low sodium soy sauce
3 tbsp freshly grated ginger
2 tbsp fresh garlic
2 tbsp olive oil
1 tbsp vinegar
2 tsp brown sugar substitute
2 tsp grated orange peel
1/4 tsp white pepper
1 tbsp cornstarch
1 tbsp water
1 lb. boneless skinless chicken breasts, cut into strips

What You Need To Do:

Whisk together the orange juice, soy sauce, ginger, garlic, 1 tbsp of olive oil, vinegar, brown sugar, orange peel, and pepper.

Heat large skillet. Add other tbsp of olive oil. Brown chicken strips, being sure to cook thoroughly. Remove chicken from pan.

Add sauce to skillet. Whisk together cornstarch and water, whisk into sauce mix. Boil about 30 seconds. Return chicken to pan and cook additional minute.

I served mine on whole grain brown rice with egg rolls and honey ginger carrots.

Mushroom Steak

What You Need:

couple of steaks, whatever cut is cheapest.
2 large onions, sliced.
4 or 5 mushrooms sliced
olive oil
shredded mozza or monterrey jack cheese
barbecue sauce

What You Need To Do:

Saute onions and mushrooms in large skillet in olive oil. Add about a tablespoon of barbecue sauce for added flavor. Set aside.

Fry steaks in same pan until cooked to desired taste.

Layer steaks with saved onions and mushrooms. Sprinkle with cheese. Microwave until cheese melts.
Serve immediately.

I served ours with a ceasar salad and julienne carrots
