Shake and Bake Bernie Style

 What You Need:


Chicken legs

1/ 2 cup bread crumbs    

1/2 tsp garlic powder

1/2 tsp smoked paprika

1/2 tsp ground sweet basil

1/2 tsp ground thyme

salt and pepper


3 medium white potatoes

2 medium carrots

1/2 tsp garlic powder

1 tsp ground parsley

1 tbsp sour cream

green beans or broocoli


What You Do:

Preheat oven to 375 degrees.

In a ziploc freezer bag, mix together the bread crumbs, the garlic powder, smoked paprika, basil, thyme, salt and pepper. Coat each chicken leg with the breading.

Transfer to a baking dish lined with parchment paper. Bake at 375 approximately 1 hour 30 minutes, longer if the chicken legs are larger. Turn the legs frequently.

Peel, slice, and cook the carrots, potatoes, and green vegetables in separate pots. Once the potatoes are cooked, mash them with 2 tbsp butter. Add the garlic powder, the parsley, and sour cream. Whisk until smooth.

Seafood Stirfry






Seafood Stirfry




I sauteed

one sliced green pepper,
one sliced red pepper,
one bunch of green onions,
one pound bay scallops and
one pound of baby shrimp.

I added

1 tsp garlic powder,
1 tsp ground ginger,
1 tsp honey,
2 fresh mint leaves, 
the juice from 2 lemons,
and one pouch of Blue Dragon honey-teriyaki stir fry sauce.

Just before it was ready, I added about a dozen broccoli florets. I served it on a bed of white rice. Total prep and cooking time was 20 minutes.

Sweet Sticky Buns


Sweet Sticky Cinnamon Buns


You will need a basic sweet dough. I found this recipe on an index card in my grandmother's kitchen.

In a small bowl, add 1/2 cup lukewarm water and 1 tsp sugar. dissolve 1 pkg active dry yeast in that and let it stand ten minutes.

Slightly beat 1 egg and set it aside.

Scald ( heat until bubbles begin to form in bottom of saucepan) 1 cup milk and place in mixing bowl with 1/4 cup white sugar, 1/4 cup shortening or oil, 1 tsp salt and I added a tbsp of honey for that elusive head-scratching what is it that I taste?

Add the softened yeast mix and the egg to the the milk mixture. Beat in 2 cups white flour. Then add 2 to 2 1/2 cups of flour until you get a soft dough. Knead for 7 minutes. Place in a well-greased bowl and rise in a warm area until doubled in bulk.

(while my yeast is rising, I turn my oven on to 200 degrees. Once the yeast is risen and I am mixing the ingredients, I turn the oven off. By the time the dough is ready to rise, the inside of the oven is about 80 degrees. Now I have a warm, draft free place to rise my dough)
Divide into two portions. (don't forget to heat the oven a bit again). Shape into balls and rise another 35 minutes. Flatten each with a rolling pin into a large rectangle. Brush with melted butter. Sprinkle with a mixture of 1/4 cup sugar and 1 tsp cinnamon. Roll up like a jelly roll. Cut into twelve slices.



For each ball of dough, combine 1/4 cup melted butter and 1/2 cup brown sugar. Spread into bottom of an 8 or 9 inch pan. You can dot this with pecan slices if you like. Place the sliced dough on top. Cover and rise until doubled.

Bake in 400 degree oven about 25 minutes. Invert at once onto a serving dish.

Potato-Egg Salad




What You Need:

6 – 8 medium sized potatoes, peeled and chopped
4 hard boiled eggs
1 cup mayonnaise
1 tbsp prepared mustard
1 tbsp white vinegar
1 tsp garlic powder
2 celery stalks, chopped
3 stalks green onion, chopped
salt
pepper
paprika




What You Need To Do:

Cook potatoes. Drain. Cool. In bowl, combine mayonnaise, mustard, vinegar, garlic powder, chopped celery and chopped green onion. Add potatoes and comine. Add chopped eggs. Season with salt, pepper and paprika.

Mushroom-Red Pepper Rice

WHAT YOU NEED

1 - 2 cups rice
2 tbsp olive oil
1 pound mushrooms, chopped
1 red bell pepper, chopped
1 tbsp minced garlic or garlic powder
1/4 cup soy sauce

WHAT YOU NEED TO DO:

Cook rice as per directions on packaging ( I usually put in enough water to cover rice in pot, cook over medium high until rice has absorbed all water and is light and fluffy).

Saute mushrooms and red pepper in olive oil and add minced garlic. Add cooked rice to skillet. Stir in soy sauce. Cook rice additional 10 minutes.

Baked Ham with Glaze




What You Will Need:

1 medium sized hickory smoked ham
1/4 tsp ground cumin
1/4 tsp ground coriander seed
1/4 tsp ground cloves

Glaze:

1/2 cup water
1/2 cup butter
1/2 cup honey
1 cup brown sugar
2 tbsp dijon mustard
1/4 tsp cinnamon
1/4 tsp ground cloves
1 tbsp garlic

What You Will Need To Do:

Line large roasting pan with parchment paper. Place rack on top of paper. Trim rind and fat from ham. Place on rack. Score meat. Sprinkle with coriander, cumin, and cloves. Add 1/2 cup water. Cover tightly with tin foil and bake at 350 degrees about 3.5 hours. Remove foil. Add glaze. Bake an additional 30 minutes.

To make glaze, combine all ingredients in saucepan. Cook over low heat 2 minutes. Brush on ham.

Mexican Pizza



What You Need:

4 or 5 slices of 4NAAN flatbread
1 pound ground beef
taco spice
chopped green pepper
sliced mushrooms
1/2 pound bacon, cooked and chopped
salsa sauce
grated mozzarella or monterrey jack cheese

What You Need To Do:

Grease 2 cookie sheets. Place flatbread on cookie sheets. Brush or spoon salsa sauce on, just enough to coat the bread. Sprinkle chopped bacon on top. Sprinkle green pepper on top. Cook ground beef in skillet until browned, Sprinkle with taco spice. Add spiced meat to pizza. Add mushrooms. Sprinkle with grated mozzarella. Bake at 350 degrees about 10 minutes or until edges start to brown and cheese is melted.
